You guys, I’m about to share with you a very special #recipe. This is my mother’s Autumn Soup. She has made it every fall for as long as I can remember. Every time the seasons change, it’s the first thing I crave.
It’s an insanely easy recipe, but don’t let that fool you. It is packed with flavor and fills you up while making you warm and cozy.
Here it is…
1 lbs ground beef
1-2 tbsp butter
1 cup chopped onion
4 cups water
1 cup each: carrots, celery, potato
2 tsp salt
1/2 tsp pepper
1 tsp meat extract
1 bay leaf
28 oz canned tomatoes (chopped)
Brown beef in butter in a heavy kettle. Add onions – cook 3 minutes more. Add water, carrots, celery, potatoes and seasonings. Mix thoroughly then bring to a boil. Cover and simmer for 20 minutes. Add tomatoes. Cover and simmer for 10 minutes longer.
