Pork and Chive Quiche

What You Need – 

4 Creamer Potatoes
1 Tbsp Olive Oil
1/2 lbs Ground Pork
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt and Pepper to taste
4 Eggs
1 Tbsp Chives
Gluten Free Pie Crust
OPTIONAL: 1/4 cup of Mozzarella

What You Do – 

Step 1: Pre-heat your over to 350 degrees and get your Gluten Free Pie Crust out of the freezer.  Set it aside to defrost.


Step 2: Place your Potatoes in a small pot and cover with water.  Bring to a boil and allow to cook for about 30 minutes or until you can easily pierce them with a fork.


Step 3: While your Potatoes cook, heat your Olive Oil in a medium skillet.

Step 4: Add your Ground Pork, Garlic Powder, Onion Powder, Salt and Pepper.  Cook through and set aside to cool.

Step 5: Once your Potatoes are done, cut them into smaller pieces.

Step 6: Combine your Potatoes, Pork, and Chives into a bowl and toss them together.  Set aside.

Step 7: Whisk your eggs until smooth.  Add your Pork and Potato mixture to blend.


Step 8: Pour your mixture into your Gluten Free Pie Crust.  Don’t be afraid to push things around and help it settle into the pan.


Step 9: OPTIONAL – Sprinkle your Mozzarella on top.  (I’d normally leave mine cheese free, but I had some I wanted to use up)


Step 10: Bake for 60 minutes or until the center of your quiche is fully set.

Step 11: Allow to cool


Step 12: Serve and enjoy!
